I entered in the wrong email address for my child and I can't seem to go in and change it to the correct one. Is there any way to go about doing so without setting up a whole new profile?
Unfortunately, there is no easy way for a parent to change the email address of a kid. If you have not completed setting up the chore system for your family, you have the option to delete that kid entry and recreate using the correct email address. But if you have added kids and assigned chores and have everything running, it would be advisable to send an email to firstname.lastname@example.org to get this rectified.
